Italian Sausage & Butternut Squash Soup

Posted on 07:00 by Roger
This holiday season was the first time that I had to navigate through all of the delicious, traditional holiday food on this grain free and dairy free diet.  It was intimidating as I knew the difficulty in trying to eat at other people's houses, craving sweet treats that my stomach can no longer handle, and working to find new dishes that my family and I could eat that would be yummy and invoke the holiday spirit.

I'll admit, this first year was definitely challenging.  I could have pushed someone off a sleigh just to nibble on a leg of a gingerbread man.  But I was strong.  No sleigh riders or gingerbread men were harmed.

But now that I am coming up on the end of this challenge, I am also feeling very proud of myself.  I came up with some fantastic recipes that are sure to become new holiday traditions.  I hope to share a few of those recipes over the next few weeks.  And I hope you like them as much as I did.

This first one will for sure become a fall/winter staple.  Inspired by a CSA butternut squash sitting on my counter and the contents of my freezer, this dish is hearty and delicious and completely grain and dairy free.  It is perfect as a side or featured as the main dish.

Italian Sausage & Butternut Squash Soup

1 large butternut squash
2 tbsp olive oil
1/2 tsp salt
pepper
1 large onion (chopped)
1/2 lb Italian sausage (casings removed)
6-8 garlic cloves
1 tbsp fresh chopped sage
6 cups of broth (turkey or chicken)
1tsp apple cider vinegar

Preheat the oven to 425 degrees.

Peel the butternut squash, remove the seeds, and chop into 1inch cubes.  Lightly toss the cubes with 1tbsp of olive oil and the garlic cloves.  Season with salt and pepper and toss on to baking sheet.  Bake until you are able to easily pierce the squash with a fork - approximately 45 minutes.  I usually go in and toss the squash about half way through to keep it from sticking.

Once the squash is close to being done, in a very large saucepan over medium-high heat, add the remaining olive oil.  Once the pan is hot, add the sausage.  Cook until the sausage is cooked all the way through and is golden brown.  Add the onions and cook until they are translucent and begin to carmelize.  Add in the sage and any other herbs that sounds good and stir for about 1 minute.  Add the cooked squash and garlic as well as the broth.  For the broth, I prefer to use my homemade turkey broth for a little bit of extra flavor, but chicken stock will work just as well.  Stir well and increase the heat to bring it all to a boil.

Let it boil for about 30 seconds to a minute and then reduce the heat to a simmer.  Ideally, you want it to simmer for about 30 minutes, stirring occasionally.  But I will admit that on Christmas Eve with a house of hungry people, I only let it simmer for about 10 minutes and it still tasted delicious.

Once it is done simmering, pull out your trusty immersion blender (best kitchen appliance ever) and put on your apron (you will thank me for that reminder), puree the soup.  Then add in the apple cider vinegar and stir to combine.

Taste and adjust any seasonings as desired.

Don't be afraid to make a big batch of this soup as it also freezes really well.  I like to freeze it in individual portions and then I take it to work for lunch.

Cheers to your health!

Posted on 12:54 by Roger
I would love to say that the past few weeks have been amazingly pleasant filled with holiday loveliness, productivity, and gaiety.  But due to the virus from hell that has mysteriously taken over every inch of this household and all of its inhabitants, that is just not the case.  We have all spent a considerable amount of time in our pjs, snuggled up in bed, with tissues mounding up all around us threatening to cave in at the next coughing episode.

But alas, our poor little bodies are beginning to mend and I feel that we are on the upswing.  I can see the end in sight where we will emerge fully rejuvenated and restored.  Here's hoping!

Until then, here are a few snapshots from the last few weeks.

Until next time, I wish you happiness and health as we approach the end of 2012.  Cheers!

Broken Hearted

Posted on 12:53 by Roger
Hello friends.  How are you holding up today?

I had the day off work yesterday and was festively wrapping up Christmas shopping when my husband called me to tell me the news about the school shooting.  I was standing in the middle of Barnes and Noble with tears running down my face.  My heart was instantly broken.

My instinct was to immediately drive to Little B's school, wake her up from her nap and take her home to stay by my side at all times until she reaches the age of 25.  I refrained from that plan until I could properly pull myself together.  But it was very strong primal urge.

When I did finally pick her up from school, she came running up to me so excited about the the birthday party they had for baby Jesus and the butterfly stamp that she used on her artwork.  I relished in her blissful unawareness.  As we walked out hand in hand, my girl gave me just what I needed to make me smile.

Me: "Mommy and daddy need extra hugs and kisses today because we had a really, really hard day today."

Little B: (nodded her head understandingly) "Because you didn't take a good nap?"

Me: "Yes.  Because I did not take a good nap." (with a big smile on my face)

Little B: "Okay.  You will have a hard day when you don't take nap. Don't worry mommy. I take care of you."

In these dark times when it is very easy to feel that goodness has left the world, I do my best to focus on this quote from Anne Frank.

"In spite of everything, I still believe people are really good at heart."

Whenever the world throws a low-blow like this and makes me doubt that sentiment, I think of all the people that step up to help these poor families whether that is with their time, their prayers, their love, or their acts of heroism.  These good, regular, honest people way out number the bad, damaged souls that stand alone to destroy.  In the midst of all this heartbreak, there are acts of kindness happening everywhere right this minute.  These acts of kindness are really quite beautiful if you think about it.

I think like most of the parents out there, I am spending this weekend soaking up every ounce of my child, focusing of every laugh, every freckle, every mischievous grin, and appreciating every little thing about her.

Sending all my prayers to the broken hearted.  I grieve with you.  Please know that your children will never, ever be forgotten.

From my kitchen: Almond Flour Apple Tarte

Posted on 14:32 by Roger
This weekend has been a rough one.

We received some very bad news that we lost someone in our close circle of friends.  Then we got another bad phone call that a family member had been injured in a hunting accident.  It was the kind of news that makes you lose your breath.

For the rest of the weekend, I have felt a bit lost, not quite sure to do with myself.  I hug Little B a little longer than usual.  Memorize the freckle pattern on David's arm so that I will never forget it. Commit my friend's laugh to memory.  My heart is hurting.

So I focus on the basics while my mind whirls around trying to make sense of things.  Cook dinner. Fold laundry. Take care of my girl.  I was looking for something to anchor myself to.

When I found myself with a few minutes to myself, I found myself being to pulled into the kitchen in order to find my comfort. I pulled out the big bowl, made an almond crust, peeled some apples and began to feel that old sense of calm come back over me.

And while my heart is still incredibly heavy, sometimes it only takes the smell of cinnamon and an apple tarte to help you find your balance and sense of place in this world.

This is a humble little tarte.  Not the most elegant and it crumbles a bit when you eat it.  But the taste... Oh, the taste is comforting and warm and familiar. Just what is needed to feed this tired soul.

For everyone out there reading this, love on your loved ones a little more today for no other reason that you can.

Almond Flour Apple Tarte

The crust:
1-1/2 c almond flour
1/4 tsp sea salt
1/4 tsp cinnamon
1/4 tsp baking soda
1/4 c coconut oil
1tbsp water

Preheat the oven to 350F and position rack in the middle. Combine all ingredients in a bowl. Grease a 13x5 rectangular tart pan and form the crust with the dough.  Bake at 350F for 10 minutes.

Topping:
1-2 medium apples
1 tbsp sugar
1sp cinnamon
1/2 tsp nutmeg
zest of half a lemon
maple syrup

In a small bowl, rub together the sugar and lemon zest.  Peel, core, and thinly slice the apples.  Arrange the apple slices over the baked crust.  Drizzle maple syrup lightly over the apples.

Put the tarte back into the over at 350F and bake for another 15-20 minutes until the crust is a lovely golden brown.

Home

Posted on 12:48 by Roger
I have been longing to say that word for so long... Home.

I have felt without a home for about a year.  Basically since we moved away from Austin.  Our past house in Fort Worth was not bad.  It just never felt like home.  That is a weird sensation to explain to someone.

A house is where you store your stuff.  A home is where you envision putting your Halloween pumpkins and Christmas tree every year.  A house is where you sleep at night.  A home is where you snuggle up on the couch under a blanket while reading a good book.  A house is where you occasionally eat your meals.  A home is where you enjoy long evenings with family and friends sitting around the table with your glass of wine and homemade meal.

The bottom line is that a home is where you look forward to returning to at the end of every day.  A house is where you go to, well, because the day is done and you have no where else to go.

From the minute that we stepped into this new house, it felt like home.  We are slowly settling into our groove here in our new digs.  Learning its charms, as well as its quirks.  And slowly we are making it our own.

It is weird how a house - a structure made up of walls, floors, windows, and a roof - can provide one with such a sense of belonging.  A home base in a world of meetings, errands, school, traffic, and due dates.  It is the calm that greets us at the door and allows us to close out all of that noise for a bit while we recharge.

Well, whatever it is, this house has made a huge difference for us as a family.  Life just seems to be more smooth and be less stressful now that we live here.

I can't really put my finger on why that is...

Maybe it is all the natural light that floods every room.
Or all of the fun places for Little B to explore in the backyard.
Or the kitchen that allows making dinner to be fun again instead of a dreaded chore.
Or the wood floors that creak when you walk on them.

Or maybe it is all of the above.  I don't really know.  But I also don't really care, so long as I get to keep on enjoying it.

I love lists Wednesdays!

Posted on 18:29 by Roger

:: Sarah Jaffe's song, Clementine, has been playing over and over in my head.  This may be my life's soundtrack theme song for this month.  It fits my mood.

:: Little B has decided that she no longer wants to be a Christmas Tree for Halloween.  Now she wants to be Minnie Mouse.  I am totally on board with this costume change.  Minnie Mouse - I can make that happen.  Christmas Tree - Not quite sure where to even begin with that one.

:: Getting so excited about Halloween.  We have been told that the trick-or-treaters come out in full force in our new neighborhood.  You do not know how happy this makes me.

:: For Halloween I plan on pulling out my old standby with my Wednesday Adams costume.  An oldie but a goodie.  Wednesday Adams is truly my Halloween soul mate costume.

:: I am trying to talk my husband into being the  Dos Equis Most Interesting Man In The World.  If anyone could pull it off, it is David.  But so far I have not talked him into it.  I still have time.

:: I finished Gone Girl earlier this week and my mind is still spinning.  The characters are so messed up.  I has been a long time since a book has swept me up like that and flat out surprised me.

:: Looking for my next book choice.  Any recommendations on what to read next?

:: I am loving all the fall vegetables coming in through out CSA.  We are eating like kings over here.

Gone Girl

Posted on 06:19 by Roger

I really need the world to go on pause so I can finish this book. This story is so messed up, but completely enthralling.  Holy smack! Little B might just have to eat kitchen scraps and I may not sleep tonight just so I can find out what happens.

Is anyone else reading this too?

Catching up

Posted on 06:01 by Roger
As I sit here typing this, I am the only one awake at the moment. A few precious quiet moments all to myself.  The sun is just barely starting to come up as I sip on my tea and stare down at  my new October Martha Stewart magazine that I have yet to open.

I am so content in this moment.

Life is good.

What I imagined to be a brief interlude from my normal postings turned into a much larger reprieve.  Such is life I guess.  While my time away was unplanned, it was the right thing to do.  To focus on the living of life rather than the writing of it.  The perspective of walking away for a bit often provides so much substance for the act of returning.  Funny of how things work out that way.

But I am back now, finding inspiration in so many places that it hard to focus on just one thing to write about.  So knowing that, this post will serve as our quick catch up call.  You know, the one where you catch up with a friend that you have not spoken to in a while and give them the highlight reel of your life.

Highlight reel beginning...

:: We enjoyed our annual trip to the beach with friends.  A hurricane tried to cancel our plans, but we showed stinkin' Isaac who is boss around here.  While the drive to Florida was not my favorite, the beach house, great company, and  the crashing of the waves quickly made it all worth it.

::  We as a family had a setback this past month that left us feeling a bit raw.  Nothing that I want to go into too deeply here, but just to say that we have come through the storm and are now on the other side of it.

:: Our girl turned 3!  And what better way to celebrate than to have all her cousins in town to celebrate the occasion.  All 3 of my brothers were in my house all at the same time.  That rarely happens. The weekend was amazing and exhausting and exhilarating all at once.

:: Just this past week, we moved into an old 1950s house that is absolutely wonderful with its natural light, quirkiness, and open space. I think I am in love! The backyard is big and green and perfect for a little girl and her dog to run wild while the momma watches through all the windows while making dinner.  The best part of this house is how well it works for our family.   I am not sure if it is the layout, the beauty of it, or even just the vibe... but whatever it is, it has made all the difference.  And for that I am incredibly thankful for.

:: Our first cold front of the season came through this weekend.  We actually had to turn the heat for a little bit last night!  Today I will be pulling out my tall boots and sweaters.  I love this time of year.

:: Later today we are hosting our first dinner in the new house!  We are celebrating both my husband's and sister-in-law's birthdays.  I am so excited to have everyone over and to kick off the first of many great evenings at our new home.  Homemade chili is on the menu and the weather could not be more perfect for it.

So that is the update for now.  Pictures coming soon.  Just a few more boxes to unpack before I  remember where I packed the camera/computer cable.  I can not wait to discover all the new nooks and crannies and sunlight angles for my camera to capture.

I love lists Tuesdays!

Posted on 07:30 by Roger
Be forewarned, this post is a whole bunch of randomness crammed into one post.  But hey, if I make it into a list, that makes my stream of conscious coherent, right?  This is where you graciously nod your head in agreement.

So here goes nothing...

:: Hello water polo!  If you have not checked out the eye candy in the pool, you are missing out.  I think I have found my new favorite sport.

:: Speaking of Olympics, the women's gymnast outfits (can we even call them that!) leave very little to the imagination. And then, when you throw in all that chalk splatter, it is downright scandalous!

:: I am so ready for August to be done.  I go through this each year, where I seriously ask myself why the hell we live in Texas and put up with this oppressive heat.  It makes me cranky.

:: Hell on Wheels starts back up on AMC this weekend and I am giddy with excitement.

:: I have officially decided that I am adding "to attend a ball" to my bucket list.  I think it would be fun to dress up all beauty queen style and see what it is all about.  Fort Worth has its good share of balls, so I am going to work on making this happen.  We will see how it goes... I have yet to share this decision with my husband, who of course would be my escort in this whole ball-attending business.

That's all I have for now.  What is on your mind this Tuesday morning?

My latest eating "kick"

Posted on 12:35 by Roger
Sometimes I think my eating style is little too much like that of a toddler.  I go through "kicks" where I sort of get obsessed with a specific food or dish and only want to eat that for days/weeks on end.

It drives my husband crazy.  In fact, if he sees one more bell pepper stuffed with crab, he may just throw down at dinner time one of these days.  And for those of you that know my husband outside of this blog, you know how truly entertaining that throw down might be coming from my usually mild-tempered husband.

My current ongoing kick is apricot jam mixed into our plain, homemade yogurt topped with nuts, cinnamon, and nutmeg.  I eat it for breakfast most mornings, especially during the week.  Fast, easy... it is one of my better "kicks".

No real profound statement with this blog post.  Just wanted to share.

What dish do you find yourself making over and over again?

From my kitchen: Almond Flour Snickerdoodle Cookies

Posted on 16:18 by Roger
I have had my fair share of baking mishaps in my transition into grain-free cooking.  Sometimes it is hard to not want to throw in the towel and just give up on baking.  Let me tell you... wheat flour, it is hard to replace.

But every once in a while, life throws you a bone (or in this case a wonderful recipe) that gives you hope again.  For me, my Almond Flour Snickerdoodle Cookie recipe has become that magical bone.

Grain free, dairy free, egg free and easy to make, this recipe is like unicorn for those dealing with tummy troubles.  And let me tell you, when you find a unicorn, you better take a picture of it to show all your friends!

So that is exactly what I did.

Meet my unicorn...

Almond Flour Snickerdoodle Cookies
(grain, dairy, and egg free)

2 cups almond flour (I use Honeyville)
1/4 tsp salt
1/4 tsp baking soda
1/4 cup coconut oil
1/4 cup honey
1 tbsp vanilla extract
2 tsp nutmeg
2 tbsp cinnamon
2 tbsp sugar

In a medium bowl, combine all the almond flour, nutmeg, salt, and baking soda.  Mix well.  In a separate bowl, mix the coconut oil, honey, and vanilla.  Add the liquid ingredients to the dry ingredients and combine until it is all mixed.  If the mixture seems a little dry, add in a bit more coconut oil.

In a small bow, combine the cinnamon and sugar.

To form each cookie, scoop out the dough and form into a ball.  Roll that ball in the cinnamon mixture until coated on all sides.  Place the balls on a parchment-lined cookie sheet about 2-3 inches apart.

Using the bottom of a mason jar, cup, or measuring cup, gently press on each cookie so that it flattens out into a circle.

Bake at 350 degrees for 9-10 minutes.  Allow the cookies to cool on the cookie sheet. When you pull them out of the oven, they may seem a little under baked at first. But once they cool, they will be perfect.

Freezing tomatillos

Posted on 06:00 by Roger

We are swimming in tomatillos from our CSA.  I love me some salsa verde as much as the next girl, but it is getting to be a bit much to handle.  I saw on Pinterest that you can freeze them individually and then just pull one out whenever you need one. Salsa verde in January... sounds delicious.

To me, tomatillos seem like something that would not freeze well, like tomatoes.  But I have learned that it is best not to question Pinterest's wisdom.  So I am gonna give freezing a whirl.  I will let you know how they turn out.

Wish me luck!

What I am loving (and not loving)

Posted on 18:37 by Roger
This week has been a roller coaster of emotions.  Some things I am loving. And some other things that I am not so much loving.  It is hard to not feel conflicted.  On one side I want to allow myself to be so excited about things.  But then it is hard to not let that excitement get pulled down by other forces.

Such is life.  It is never perfect or imperfect.  It just is what it is, a hot mess of all of the above.  So on that note, I am listing both categories today: What I am loving and what I am not loving. You may ask why I list both.  Well my answer to that is because it is real life.  In all its craziness, real life is beautiful and bonkers all at the same time.

What I am not loving:
  • Heat advisories
  • The tragedy in Colorado
  • Our tree splitting in half during yesterday's storm that is now blocking my car in
  • Sneezing
  • Little B's temper tantrum today while at the aquarium
  • Going into work on a Sunday
  • That my latest experiments with CSA vegetables have been a flop
  • Uncertainty surrounding my husband's job

What I am loving:
  • The blast of the AC
  • The fact that our car was not in the path of the fallen tree (we are talking mere inches here, people!)
  • An unexpected phone call from my CIO saying he is impressed with me and that I have work there as long as I want it (hooray!)
  • New friends that feel like old ones
  • Happy anticipation of our beach trip that is coming up
  • Paying off debt
  • Red wine
  • Being right in a harmless argument with my husband (don't even pretend that doesn't bring you joy!)
  • My book club that teaches me the most random things every time I go.  I am learning so much.
  • Bachelorette season finale on Sunday night. (I make no apologies for how excited I get over that darn show.)
  • Feeling genuine happiness with another friend's happiness... Love that!
So long as the Loving list outweighs the Not Loving list, then it is a good week.  How has your week been?

A glimpse into the future

Posted on 13:54 by Roger
Do you ever just take a quick glance at your kid and for a split second see the adult that they will eventually become instead of the little baby/toddler that they currently are?

I have been having a lot of little moments like that recently with Little B.

Normally she is running around, goofing off, with a silly little kid expression on her face.  But every once in a while, I will catch a look like the one shown above in the picture and all of a sudden I can see her older -  As teenager negotiating for the car keys or as a grown woman telling me that she can't talk now because she has to go present her argument in front of the Supreme Court in less than an hour.

Okay maybe that last example is a little much, but you get the idea.

I can't really describe the feeling that it gives me.  It is enlightening, a little weird, and amazing all at the same time.

Does this ever happen to you with your kids?

Happy weekend!

Posted on 11:43 by Roger
via

Alas, another weekend.  While it seemed that we just had one with 4th of July being on a Wednesday, I am more than ready for my second weekend of the week.  It seems that recently my life has been non-stop busy during Monday through Friday.  So I am loving that my weekends are the perfect balance with our lack of agenda.  This weekend my only plans include:

:: Hanging with two of my favorite girls, Stacy and Jess, last night.  It is always an instant party when we get together, especially  looking at all the empty wine bottles left out in the aftermath.  Ah, good times were definitely had.

:: Our weekly pickup of CSA vegetables.  So much more fun to pick out our colorful veggies outside among fun people than heading to the boring ol' grocery store.

:: Movie night with my honey tonight.  Not sure yet what we will watch.

:: Maybe a trip to park with the little one. Gotta go early before the temps get too hot.

:: Some time spent catching up on my reading.

:: And then there will for sure be time spent in the kitchen coming up with recipes that use up our CSA vegetables.  I am finding that Pinterest is an awesome resource for some of these more exotic vegetables like lemongrass or Chinese okra.

What are y'all up to this weekend?

On my nightstand

Posted on 09:00 by Roger

As usual, my reading is all over the place this month.

In the Kingdom of Men is a book club read and I am really liking it.  It did not take long for me to get sucked in.

I am listening to Dragonfly in Amber as an audio book.  Not sure I am liking this one as much as the first book, Outlander (which I read the ol' fashioned way), because it is in audio or the story is just slow.  Either way, I am hanging in there.

To Kill a Mockingbird is another one that I am listening to.  It is narrated by Sissy Spacek.  She is perfection.  It is like she was made to read this book.

I’d love to hear what’s stacked on your nightstand. Any books you’re loving right now? Have you read any of the books I highlighted? What did you think of them?
