This past weekend I decided to make an 19 lb. turkey!
No real occasion except that we were celebrating a rare weekend with David at home with us. Love those kind of weekends. So you will note a menu full of dinners to use up all that leftover turkey.
- Monday: Turkey Pad Thai (using gluten free pumpkin ginger rice noodles)
- Tuesday: Steak with crispy roasted cauliflower
- Wednesday: Turkey soup full of corn, garlic, onions, and greens (perfect for a rainy weeknight)
- Thursday: Turkey enchiladas
- Friday: Dinner with my parents
And to be even more efficient with that huge turkey, today I will make homemade turkey stock. It is so healthy for you, could be not easier and is so much better than anything you can buy in the store. Hmm, maybe I will post a recipe about it later this week.
