In an attempt to not turn on the oven during this heat wave, we have been purchasing a lot of rotisserie chickens. But there are only so many chicken sandwiches a girl can eat. This is where Cajun Chicken Salad comes in.
It is so easy to make. You can eat it on bread, on lettuce, on a cracker or directly off the spoon. I don't judge. It is that good!
I love the flexibility of this dish. I love the amazing color - The paprika gives it that amazing, delicious orange while the onion and cilantro provide a pop of purple and green.
I often eat it for lunch because it is quick to just grab out of the fridge. But you could also serve this as an appetizer or main course.
I promise you. If you make this dish, it will not last long.

Cajun Chicken Salad
1 rotisserie chicken, shredded
1 red onion, diced
1 cup chopped cilantro
1-2 cups mayo
1-2 tbsp dijon mustard
1-2 splashes of apple cider vinegar
1 cup chopped cilantro
3 tbsp smoked paprika
1/2 tbsp red pepper flakes
1 tsp garlic powder
1 tsp cumin
1 tsp salt
Pile all the ingredients into a big bowl and mix. Rotisserie chickens can vary so much with their own seasoning. So make sure you taste it as you go along and increase/decrease the spices according to what you like. You like it a little spicier, then add more red pepper flakes. Hate cilantro, then replace with basil.
