The week of Christmas... Woohoo! Lots going on this week, so I am keeping things simple.
Monday: Meatloaf and sauteed spinach with garlic and butter
Tuesday: Grilled pizzas
Wednesday: Pasta with fresh red peppers, mozzarella, spinach, and mushrooms
Thursday: Quesadillas
Friday: We are making our traditional Christmas Eve dinner that we enjoy every year - Huge crab cakes with some fresh fish, followed up by peppermint hot chocolate carried in travel mugs as we go off to look at Christmas lights.
