I think I am in love!
I have a new favorite pizza that I can not stop thinking about. Maybe because it has taken a vegetable (the beet) from our CSA that I had no idea what to do with and made it delicious. Maybe it is the combination of sweet and salty. Maybe it is because it could not be more easy to make. Who knows! All I know is that I love it.
Everyone... let me introduce you to my latest culinary creation - Pizza with beets, basil, and honey!
Yes, you heard me right. I said beets.
pizza dough (whatever you normally use. we actually use pita bread from this place down the road.)
1 roasted beet, chopped
pecorino romano cheese
chopped basil
honey
salt
olive oil
Layer the chopped basil, roasted beets, and cheese all over the pizza dough. Then drizzle with olive oil and honey. Sprinkle a bit of salt on top. Bake or grill your pizza just until the cheese melts. Voila! That's it. Get ready for some deliciousness.
It is crazy. The beets have this sweet, but kind of nutty flavor. And the salty cheese mixed with the honey is like an crazy party in your mouth. So good!
