We received a bag of purple hull peas in our CSA this past week.
I had no idea what to do with them. But as I was making breakfast and saw the aftermath of bacon grease covering the pan, I came up with a plan.
What one ingredient can make almost anything taste absolutely delicious? Bacon, of course!
Peas and bacon. Bacon and peas. Sounds like quite a lovely combination. And with that, my recipe was born.
Peas were thrown into the pot. Then some garlic cloves. Then a dash of salt and pepper. And then finally the rising star of the dish... bacon grease.
I covered my concoction with approximately 2 inches of water and brought it all to a boil.... you know, just to get everything talking to one another and mixing it up. Can't have the garlic just hanging out of the side hoping to be asked for dance.
Once it had boiled for about a minute, I brought it down to a simmer, covered with a lid, and let it sit for 2 hours. I checked it halfway through and added just a touch more water.
After two hours, it was time for the test. Would I eat it? Would David want to eat it? More importantly would the very serious food critic, Little B, want to eat it? One quick bite and my fears were put to rest.
Here is the official recipe. And I feel I disclaimer all my recipes and remind people in how I cook. I rarely measure anything. And I use whatever I have on hand. So look at this recipe as a suggestion instead of strict rules.

Purple Hull Peas with Bacon Grease
1 lb of purple hull peas
1 dash of salt
1 dash pepper
1 tbsp bacon grease
2 whole garlic cloves
Throw everything into a pot. Cover with approximately 2 inches of water. Bring to boil. Cover with a lid and simmer for 1 hour. Check to see if additional water is needed. Continue to simmer, covered, for additional hour. You know the peas are done when they are soft, but not mushy. Be careful to not let them overcook.
