We have bumper crops of bananas, okra, cucumbers, tomatoes, peppers and peaches. This, of course, translates to lots of time spent canning and bread making. I have a love/hate relationship with canning and bread making right now. I love it because I know that we will be enjoying peach butter and pickled okra all winter long. But I also hate it because the last thing I want to do during our triple digit heat wave is stand over a hot stove to can and then stand some more over a hot stove to get dinner ready.
The other adventures making our week crazy have to do with a lot of time driving in the car. We are helping a good friend move back to Austin... Hooray!!!! I just can't seem to wipe off the silly grin on my face knowing that my friend, Pansy, and I will soon be up to our old tricks. And then at some point I need to see this stinkin' cute new baby niece that recently came into this world. I need to hold some cute baby buns! We also have a few other friends that had babies within the last 2 weeks... so we are bringing over food and such to them. Then add swim lessons, work stuff, and all the other normal stuff that a week throws at you. Whew... I am exhausted just thinking about it all.
You may ask what all of this has to do with meal planning. Well, I am getting to that.
With a crazy week like this, it would be easy to just order takeout. And the thought has crossed my mind. But I also feel that on weeks like this, it is even more important to eat healthy, homemade meals. It just takes a bit more planning and some additional prep work but it is worth it to feel good and have energy to do everything. And meals need to be quick and easy. So with all of that said, here is this week's meal plan.

- Monday: Ribs (cooked on the grill over the weekend) and fried eggplant. I don't really like eggplant so we will see if frying truly does make everything better
- Tuesday: Black beans and rice
- Wednesday: Meatballs (pulled from the freezer) and salad
- Thursday: Ham and cheese pasta bake (using leftover diced ham from the freezer). I will most likely sneak a few vegetables into this as well.
- Friday: Grilled pizzas
